My Blackforest Cake!!

So i got really bored the other day and i decided to make a blackforest cake!!! Also i should say this is Derek C and ive been the blogger over all over the posts so far im sure my other half will eventually post otherwise ill just change this to baking with Derek :P :P!!!!

Was joking the other day with a friend and we where saying that myself and Derek S must be eating so much sugary foods and that the blog may have to be changed to Baking with the Diabetic Dereks :P :P!!! Well i just wana say that yeah we do bake all the time but ive changed my eating habbits and eat a much healthier diet which is starting to show as ive lost near a stone now this year! When we do bake i dont tell myself i cant have some cookies or cake i just have smaller portions! Its working for me so far so gonna keep it up :D!!!  So although i think Baking with the Diabetic Dereks sounds funny i dont think its gonna happen haha!!!

Anyways so wanted to make this Blackforest cake when i was bored i had NO idea where to start but i new theres chocolate sponge cake, cherries and cream so i looked up a few recipes on the internet alot of them where just way to complicated so i ended up going at it by myself and i think it turned out alright!!

So here we go Ingredients:

6 Eggs
Self Raising Flour
Margarine
Caster Sugar
200g Cocoa Powder
1 Tablespoon Baking Powder
1 Can Pitted Black Cherries in syrup
500ml Fresh whipping cream
100g icing sugar
100g milk choc

Other stuffs you might wana grab:
2 round spring form baking tins (I only have 1, would be quicker if youve 2 the same size)
Electric Mixer
Pallet Knife
Large Mixing Bowl
Weighing Scales
Cheese Grater
And maybe an oven :P


For the Sponge:

Preheat your oven to 180c.

Weigh out the 6 eggs (in their shell) then whatever weight the eggs are weigh the margarine, caster sugar and flour out to the same weight (if the eggs weigh 400 the rest need to weigh 400 each).

Mix the Margarine and the sugar together in your mixing bowl until the mixture gets nice and creamy.

Next break all the eggs into the mixture, add the flour, cocoa powder and baking powder.

Mix everything together trying to get as much air into the mixture as possible.

When fully combined the mixture should be of dropping consistency (i.e when spooned up the mixture should be able to drop off the spoon without any force being used) add some milk or flour if neccessary.

Now divide the mixture between your evenly between your two baking tins if youve only 1 this will take longer, as youll have to bake the sponges separately. Put your tins or tin in the oven and back for around 25 - 30 mins. Don't open the mixture before 20 mins as this might knock all the air from your mixture (flat cakes then) To check if the cake is fully cooked insert a long sharp knife into the centre of the cake if it comes out clean theyre done :D!!! If they dont just keep going i suppose!

Leave them aside to cool.

While theyre cooling you can go clean your large mixing bowl and get ready to use it again for the cream. Once your bowl is clean open up that can of cherries and strain away half of the liquid and leave the cherries in the remainder of the liquid in a bowl until ready to use in a while!

Now back to the cream pour the cream into your mixing bowl along with the icing sugar and get whipping (if your doing this by hand it will take some time so just keep going) if your doing it with an electric mixer should take about 5 minutes. Once done leave to cool in the refrigerator until your ready to use it.

Now get your grater and your choc and grate all that choc up, set aside to be used for the finishing off of the cake.

So now take your sponges out of the baking tins. if they arnt fully cooled yet just leave them to cool on separate plates.

You can now pour the remainder of your cherry syrup over your two sponge cakes!! This will make them taste yum and keep them moist.

Now choose which sponge will be your base and layer half of the cherries all around the top of this layer, Cover with 1/3 of the whipped cream then sit your next sponge on top.

Now get your pallet knife and spread the remainder 2/3's of the cream all over the top and sides of the assembled sponges smoothing out flat with the pallet knife.

Decorate on top with your cherries and on the sides of the cake use your grated chocolate!

Heres a picture, tasted ok im sure it will taste better next time i make it... If ive any changes to be made ill post them soon :D!!!
